
I love anything served in a bowl. Today I was craving a salad with chicken. Although this might not sound terribly exciting, it was easy and delicious. Salads are so personal, make this recipe, grab your creative “juices” and make it your own.

Boneless skinless chicken breasts. I put them in a ziplock bag and pounded them thin. Then dusted them with my favorite seasonings. If you are using an all-purpose seasoning, then be cautious with adding additional salt.

Next heat your pan with some olive oil or you can also use avocado oil. These pieces are nice and thin. They will not take long to cook.


Brown on both sides to evenly cook. Let rest for 5 minutes to lock in all the juicy flavors. Then cut as desired. I cut my chicken into bite sized pieces for my salad bowl.


Use what’s in your fridge or whatever is fresh in season. Cucumbers, tomatoes and red onions are always a staple in our house.

Quick and Easy Salad with Chicken
A fresh, light, salad delicious for lunch or dinner.
Ingredients
- 2 large boneless, skinless chicken breasts
- garlic powder
- All-purpose seasoning – I like Jack Stack.
- 2 Tablespoons Olive Oil or Avocado Oil for the pan.
- A generous helping of your favorite leafy greens, such as arugula, romaine, whatever is your favorite.
- Tomatoes, red onions, cucumbers
- Salad dressing
Directions
- Put the chicken breast – one at a time – in a ziplock baggie, making sure to zip it before pounding thin. Or you can purchase thin sliced chicken breasts at a local supermarket is an option.
- Season the pounded chicken with garlic powder and All-purpose seasoning.
- In a large skillet, heat the olive oil, carefully lay the chicken breast in the skillet watching closely because they are thin. Brown each side of the chicken until done, about 10 minutes. Remove chicken from pan and put on plate to rest.
- In a large bowl or plate, layer lettuce greens, top with sliced cooked chicken and your favorite toppings such as suggested tomatoes, red onions, cucumbers. Top with blue cheese or an alternative favorite cheese of your choice. Drizzle dressing. Enjoy!
